Meralda McCann's Pancakes

I first enjoyed these delicious pancakes at Meralda McCann's home on my first trip to California in 1977. She was my Dad's cousin and lived in San Diego. She loved to cook and made these often for her son Marc.

Ingredients:

2 eggs well beaten

1 tsp vanilla

1 c. milk

1 c. flour

1 Tbs sugar

1 Tbs baking powder

corn, drasined well (optional)

Instructions:

Sift together flour, sugar, baking powder. Add milk, eggs, vanilla. Mix well. Add corn (optional)

Pour onto a well greased and heated pan or griddle.
