Pastry Cream



Ingredients:

  • 2 c. Milk

  • 1/2 c. Bakers Sugar

  • 4 Tbsp All Purpose Flour

  • 2 Egg Yolks

  • 1 Tbsp Unsalted butter

  • 2 tsp Vanilla extract

Instructions:

  1. Scald milk in heavy saucepan. Start a second pan of water to boil.

  2. Whisk sugar and flour together in stainless steel bowl

  3. Remove skin from scalded milk and slowly pour into flour mixture whisking constantly

  4. Place the bowl over simmering water and cook, stirring until mixture lightly coats back of spoon. About 10 min.

  5. Add egg yolks and cook stirring constantly until mixture heavily coats back of spoon. About 10 min more. Remove from heat.

  6. Add butter and vanilla and mix well. Cover surface with plastic wrap or butter to prevent formation of a skin. Chill.

  7. Makes ~2.5 cups
