Ejjet (Egg/Potato Omelet)

12 eggs lightly beaten

1 large or 2 small Potatoes grated

1 large Onion grated

3 stalks Celery grated

1 Green Pepper grated

3/4 c. Flour (more if too loose)

2 cloves garlic crushed

1 Tbs. Parsley dried crushed

1 Tbs. Mint dried crushed

1/2 tsp salt / pepper

oil in pan

Mix ingredients

Heat skillet high then lower heat, add oil, ladle in 3 pancakes cook till brown flip over till done.
