Dad's Famous Fried Eggs by George Fayad Sr.

My father loves food more than anyone I know, yet the only thing I remember him cooking were fried eggs. And breakfast wasn't the only time he would make them. If my mother was out for the evening, he would have them for dinner. If his buddies came over after a late night of dancing, he would make everyone fried eggs. He often spoke of the best fried eggs he'd ever eaten each time he fried his famous eggs.

"You should have tasted those eggs" he'd say. " They serve them right in the pan with Syrian bread. Nice and hot and I would wipe them up with the Syrian bread. Mmmm, nifty." This was one of the many entertaining stories he brought back from his memorable trip to Mexico City, where he visited his aunt and uncle.

I never knew there was an art to making fried eggs, but I swear, my father's eggs are the best I've ever eaten. I asked him what his secret was. "I make them with alot of 'Lub' (love)".

Use a cast iron skillet, for best results.

Pour about two Tablespoons of extra virgin olive oil on bottom of

pan.

Get it "good and hot" (high setting).

Add eggs (he breaks them one on top of the other).

Lower heat to medium and "cook it slow".

Flip over when edges are brown (if desired).

Don't forget to serve them right in the pan with Syrian bread..
