In the days when department stores had bakeries, the blueberry muffins made at Jordan's were a required purchase. Although we needed no coaxing, I fondly remember tasting the samples they would put on the counter to entice a purchase.
1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 cup milk
2 cups flour
2 tsp. baking powder
2.5 cup blueberries
1/2 tsp salt
2 TBS Sugar
1 tsp Vanilla
Preheat oven to 375
Cream butter and sugar on low then add eggs one at a time,
sift flour, sugar, baking powder, and salt. add to above alternating with milk with vanilla
mash 1/2 c berries and stir into mixture by hand
Dredge remaining berries in flour to prevent sinking before adding to wet mixture.
Grease muffin tin and butter top of pan. Sprinkle a little sugar on tops
Bake at 375 for 30 minutes. cool 1 hour when you take them out of the oven.
