Lubya (Green Beans and Lamb)

1 lb lamb and bones cut in stew cubes

1 lb green beans

1 Tbsp rendered butter

1 medium onion, chopped

2 cloves garlic, minced

salt; and pepper to taste

1 can tomato paste

1 can tomato sauce (4 oz)

Clean and cut beans in 2" pieces. Set aside.

Saute meat in butter, add onion and garlic and continue to saute. Add beans, salt and pepper. Toss lightly and cover to steam slowly for 15 mins. or until beans are cooked. Add tomato paste, and simmer 5 mins. Then add 3 tomato paste cans of water and tomato sauce. Cover and cook 10-15 mins longer.

Serve with rice pilaf.
