Mississippi Mud Cake

I made this cake for Scott Johnson and Mella Mincberg's wedding.

It was gone almost as soon as it was served! It has been a

favorite of mine for many years.

2 cups flour

1 tsp baking soda pinch salt

1 3/4 cups coffee

1/4 cup bourbon

5 oz unsweetened chocolate

2 sticks (1 cup) butter

2 cups sugar

2 eggs

1 tsp vanilla

Into a bowl, sift flour, soda and salt.

In the top of a double boiler, set over simmering water, heat coffee and bourbon for 5 mins. Add unsweetened chocolate and butter all cut into pieces. Continually stir the mixture until the chocolate and butter are melted and the mixture is smooth. Remove the pan from the heat and stir in sugar. Let the mixture cool for

3 mins and transfer to the bowl of a mixer, or food processor.

Add the flour mixture to the chocolate mixture 1/2 cup at a time while beating at a medium speed, and continue to beat for 1 min.

Add the eggs, and vanilla.

Butter a 9" Tube pan, and coat with cocoa. Pour the batter into the pan and bake at 275 for 1 1/2 hours, or until a tester comes out clean. Let the cake cool completely in the pan on a rack and turn out onto a serving plate.

Serve with whipped cream, sweetened with a little confectioner'\ sugar and, if you like, white creme de cacao.
