Potato Salad by Sarah Colletti

My Aunt Sarah was the one who brought the potato salad on Christmas Eve, birthdays and graduations. If you choose to make this recipe you'll see why!

"The trick to my potato salad is that I boil the potatoes with the skins on, two days ahead."

5 lbs potatoes

1 red onion (chopped)

1 white onion (chopped)

salt

pepper

oregano

paprika

mayonnaise

4 hard boiled eggs (sliced)

Boil the potatoes, with the skins on, two days ahead of when you will need this salad. Refrigerate. The potatoes should thus be very firm. Peel and cut up the potatoes and add chopped onions, mayonnaise and spices. (She doesn't know the exact amount so you will have to experiment until it tastes the way you want it). Mix well and smooth out the top. Add sliced, hard boiled eggs and arrange them on top of the salad. Garnish with a touch of each of the spices, making sure the paprika stands out to "make it look pretty."
