Recipes by Donna Fayad

The following recipes were created by Donna Fayad. She is one of the most creative chefs I know. When she dines out, she often acutely analyzes the ingredients of a meal and then recreates it in her kitchen. She says cooking is like painting to her, using her intuitiveness and unique talent to put together the most delicious dinners. I'm sure you will agree! Her husband Len certainly does!

Salmon with Ginger-Mustard Sauce

1 whole bunch parsley

1 whole bunch scallions

3-4 garlic cloves (chopped fine)

2 TBSP fresh ginger (grated)

a little less than 1/4 cup soy sauce

3 TBSP Dijon mustard pepper to taste

1/2 cup liquid coffee mate,or light creme

olive oil

1/4 stick butter

2 Salmon fillets

Saute garlic cloves, parsley and scallions in a little oil and

about 1/4 stick butter until almost done.

Mix soy sauce with ginger. Add mustard and coffee mate or creme.

(You should be able to taste each of the ingredients).

Add pepper.

Add this to the sauted ingredients and mix well.

Add Salmon fillets and cook on low heat until done.

Tomato-Basil Sauce

12 whole (long) tomatoes

1 can anchovies in oil

3-4 cloves garlic

1 bunch basil

salt + pepper to taste

Boil tomatoes until skin begins to pop off. water over them. Peel and set aside.

Drain and pour cold

In food processor pulverize anchovies (with oil), garlic, basil, salt and pepper. Add tomatoes and turn on again very quickly (should be lumpy).
